Winemaking process

Our winemaking starts with hand-picked harvest into boxes, with a soft pressing, must decanting then a long maceration and alcoholic fermentation made by selected yeasts at a controlled temperature of 16°C

Sparkling porcess

Secondary fermentation in bottle, enhanced by 36 months of lees ageing

Organoleptic analysis

Pale straw yellow in colour, stream of fine and long lasting bubbles, tropical fruits and white flowers aromas. Fresh, savory, complete and creamy taste
