One hundred years of history and passion
This traditional farming family came from Botticino and moved into the Monte Mario farmhouse in Lonato in the early 1900s.
The winemaking process
The winemaking process
Wine is produced by harvesting the grapes by hand and de-stemming them with minimum crushing. They are then soaked for a lengthy period and select yeasts are used for the alcoholic fermentation process.
Grapes and aging
Our wines are produced with Groppello, Merlot, Rebo, Lugana, Cabernet and Chardonnay grapes. Aging takes place in cement barrels for a period that varies, depending on the wine, from 12 to 18 months followed by a subsequent rest in the bottle.

The Saottini estate has 10 hectares of land split as follows with grapevines: 1.5 hectares of Groppello, 2.5 hectares of Lugana, 2 hectares of Rebo, 1 hectare of Merlot, 1,5 hectares of Cabernet and 1,5 hectares of Chardonnay.
