Wine produced from TURBIANA and CHARDONNAY grapes using traditional methods. After an early harvest this wine is fermented in bottles and rested using yeasts for at least 36 months.

THE WINEMAKING PROCESS
Grapes are harvested by hand and the whole grape is pressed. The wine must is decanted and select yeasts are used for the alcoholic fermentation process at a controlled temperature of 16°C.

SPARKLING TECHNIQUE
The wine is fermented a second time in the bottle and rested using yeasts for 36 months.

SENSORY EVALUATION
Slight pale yellow colour with fine, persistent bubbles, and the distinct aroma of tropical fruit and delicate white flowers. Strong fresh taste which is also full and creamy.
